DIY Jerk
There is no rocket science to making jerk seasoning, so why not do it yourself?
Marcia Hutchinson holder of Heart Trust NTA level 4 certification in culinary arts and cooking, and level 3 in pastry and design. She has also worked at various renowned restaurants in the Jamaica restaurant industry including being head chef at a popular Jamaican jerk spot ‘Scotties Jerk Hut’ – will walk us through a quick simple way to make jerk seasoning at home.

Recipe
5 sprigs thyme
1 large onion
4 green onions
8 pimento seeds
3 whole scotch bonnet peppers
7 cloves garlic
1\4 cup vinegar
2 tbsp olive oil
1\4 tsp salt
1 tsp ginger
Direction:
Wash, chop, and combine all ingredients in a blender.
Blend until a smooth consistency is achieved.
